Thai Popcorn Chicken Noodle Lettuce Cups

You will need:

 

For the Dressing

  • 60g smooth peanut butter
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice wine vinegar
  • 2 – 3 tbsp water

Everything Else

  • 2 little gem lettuces
  • 3 small carrots, finely chopped or shredded*
  • 2 celery stalks (or cucumber), finely chopped or shredded*
  • 16 – 20 Popcorn Chicken Bites (2-3 per lettuce cup)
  • 80g rice noodles (dry weight)
  • 3 spring onions finely chopped
  • 3 tbsp chopped peanuts
  • Fresh basil or coriander to serve, optional

*A julienne peeler is the easiest way of creating fine veggie-like noodles!

Step-by-step guide:

1. One

Whisk together all the dressing ingredients in a bowl or jug. Add enough water to make smooth, spoonable sauce; or to your own desired consistency.

2. Two

Prepare your veggies.

3. Three

Place the popcorn chicken bites into your air fryer at 200C (400F) for 8 minutes. Alternatively place into a preheated oven at 200C (400F) for 12 minutes. With either option, toss the popcorn chicken bites halfway through cooking.

4. Four

Place your rice noodles into a large bowl. Cover with boiling water. Break up with a fork and then leave them to sit for 4 minutes. Drain and rinse WELL under cold water to remove the starch and prevent them being super sticky.

5. Five

Assemble the lettuce cups with some noodles, carrot, celery and a warm couple of popcorn chicken bites. Top with a spoon full of the sauce, a sprinkling of spring onions and chopped peanuts and a little fresh coriander or basil if desired. Serve/devour immediately!
