Turn an ordinary night into a fun pizza party with our BBQ Chicken Pizza Toasts! This simple recipe serves up a twist on pizza that you can customise per person, making mealtime a breeze. Start by pickling your own red onions in a mix of vinegar, water, honey, and salt – a quick process that adds a zesty crunch. Then, crisp up Chicken with Attitude Southern Style Chicken Tenders and lay them on slices of golden sourdough, smothered in your favourite barbecue sauce and melted mozzarella cheese. A sprinkle of thyme or your chosen herb adds the perfect finishing touch. Whether it’s a snack or a light meal, these pizza toasts are guaranteed to disappear in minutes!

Southern Style Chicken Tenders

You will need:

 

Ingredients

Pickled Onions*

  • 2 small red onions finely chopped
  • 60ml apple cider vinegar/white vinegar
  • 200ml water
  • 1 tbsp honey or maple syrup
  • 2 tsp salt

Per Person 

  • 2 – 3 Chicken with Attitude Southern Style Chicken Tenders
  • 2 slices of sourdough
  • 2 heaped tsp of your favourite barbecue sauce
  • 2 handfuls of finely grated mozzarella cheese
  • Thyme or herb of choice to serve (coriander or parsley

*Optional; you can just use thinly sliced red onion if you prefer

Step-by-step guide:

1. One

Add sliced onion to a jar.

2. Two

Mix together the vinegar, water, honey and salt to a jug. Mix and then pour in on top of the onions. Make sure they’re fully submerged. If they aren’t, just top the jar up with water.

3. Three

Leave the onions to sit for at least 30 minutes, or prepare them the night before. They’ll keep in the fridge in a sealed container for up to one week.

4. Four

Place the chicken tenders into your air fryer and cook for 7 minutes – 9 minutes at 200C (400F).

5. Five

Place your toast into the air fryer at 180C (350F) and cook for 2 minutes. Flip halfway through. Alternatively just LIGHTLY toast in a toaster.

6. Six

Spread barbecue sauce onto lightly toasted bread. Add a small pinch full of the pickled onion, top with cheese and return to the air fryer for 4 minutes at 180C (350F).

7. Seven

When the chicken tenders are cooked, tear apart and place chunks on top of the pizza toasts. Top with a sprinkling of thyme or fresh herb of choice.
