Simple Coconut Chicken Tikka!

Whip up a delicious meal in no time with our easy Coconut Chicken Tikka recipe! In just 25 minutes, you’ll have a tasty dish that serves four. We’re keeping it simple using Chicken with Attitude Crispy Golden Tenders and mixing up a creamy sauce with things like tikka paste and coconut milk. Just ladle it over your favourite rice, sprinkle some herbs and toasted coconut on top, and you’re set for a flavour-packed dinner everyone will love.

You will need:

 

For the Sauce

  • 2 heaped tsp of tikka paste
  • 150g tomato paste
  • 1 can (400ml) of full fat coconut milk
  • 80g full fat Greek yoghurt
  • 80 ml water or stock

Everything Else

  • 1 bag of Chicken with Attitude Chicken Crispy Golden Tenders
  • Rice of Choice, Flat Leaf Parsley or Coriander, and Toasted Coconut Flakes to serve

 

Step-by-step guide:

1. One

Preheat your oven to 200C (400F).

2. Two

Place your chicken tenders onto a baking tray. Bake in the preheated oven for 12 minutes. Alternatively place into your air fryer at 200C for 7 – 8 minutes. Once cooked, chop into bite size pieces.

3. Three

Add the tikka paste to a pan over a medium heat. Stir and cook for 3 minutes.

4. Four

Add the tomato paste and stir to combine.

5. Five

Pour in the coconut milk, again stirring to combine with the other ingredients in the pan.

6. Six

Finally add the Greek yoghurt, mix, add the water or stock, mix and bring to the boil. Simmer the sauce for 5 minutes.

7. Seven

Add the chopped chicken tenders to the pan, fold into the sauce and simmer together for 2 minutes more.

8. Eight

Serve the curry on a bed of your favourite rice, garnish with parsley or coriander, and some toasted coconut flakes.
